Pineapple doughnuts




Ingredients:
100 gms maida
¼ tsp baking powder
1 tsp yeast
4 tbsp sugar
1 tbsp milk
1 tbsp vanaspati
1 tsp salt
¼ cup water
¼ cup castor sugar
1 cup chopped pineapple
2 cups vanilla icecream
Oil for frying

Method:
1. Lightly stew the pineapple with 2 tbsps of sugar and keep aside.
2. Dissolve yeast in 3 tbsps of warm water and keep aside.
3. Sieve maida and baking powder.
4. Mix sugar, salt, fat, essence milk and remaining water in a bowl.
5. Add maida and yeast.
6. Knead into a smooth dough.
7. Cover and keep for ½ an hour.
8. Knead again and keep covered for further 10 minutes.
9. Roll out into a thick roti , cut with a doughnut cutter and deep fry in hot oil till golden.
10. Roll in powdered sugar and place on a serving dish.
11. Spoon the pineapple in the centre and cover with icecream.
12. Serve immediately.
