Mango Pudding
Ingredients:
1 ½ cup cake crumbs
1 tbsp sugar dissolved in ¼ cup water
1 cup mango puree
1 tbsp cornflour
3 tbsps sugar
1 cup water
1 tbsp gelatin dissolved in ½ cup water
1 cup whipped cream
1 cup vanilla icecream
Method:
1. Mix the cake crumbs and sugared water and line in a serving bowl.
2. Mix cornflour, sugar and water and cook till thick and glazed to make a custard. Keep in mind to continuously stir the mixture while cooking.
3. Mix gelatin and mango puree and add to the custard.
4. Pour into the bowl and refrigerate.
5. Decorate with sweetened whipped cream and serve with icecream.
